What is the difference between a food intolerance and an allergy? (IgG vs IgE)

IgE (a food allergy)

IgE antibodies cause immediate allergic reactions. When the immune system sees a food as harmful, it quickly releases histamines, leading to symptoms like itching, swelling, or even severe reactions like anaphylaxis which can be life-threatening and require immediate medical attention.

IgG (a food intolerance)

IgG antibodies are often seen in food sensitivities rather than allergies. IgG reactions can take hours or days to appear, causing IBS symptoms like bloating and digestive issues plus fatigue, or headaches. Intolerances are less severe.
